The weather is really beginning to warm up! It was in the upper 80’s here yesterday! Still, it’s not spring quite yet…and we are supposed to have cooler weather and rain this week, which puts me in the mood for Beef and Veggie Stew. Easy, comforting and yum!

You can get really creative with stew… almost any vegetable will do…. it’s really just a matter of personal taste. A lot of people just use carrots and potatoes… and that’s good too. I like a tomato base in mine… but, if you don’t, then just omit the tomato sauce. Oh and we can’t forget the cornbread! In Texas that’s a must!
What you’ll need:
1.5 to 2 lbs. eye of round roast, cut into cubes (or already cubed stew meat)
1 medium onion, chopped
2 stalks celery, sliced
2 cloves garlic, crushed
3 to 5 medium potatoes, peeled and cut into large chunks ( I use red potatoes)
1 cup (approx.) baby carrots, left whole or cut in half
1/2 cup (approx.) frozen cut green beans
1/2 cup (approx.) frozen whole kernel corn
1 can (6oz.) tomato sauce
1 can (15 oz.) stewed tomatoes (with peppers)
2 tsp. chili powder
dash cayenne pepper
1 tsp. onion powder
1 tsp. garlic powder ( I love garlic! )
salt and pepper to taste (needs quite a bit, but, don’t go crazy.. you can add more later)
1 can/bottle of beer (something you would drink.. I use Miller Lite since we always have it.)
What to do:
Throw everything in the crockpot. Set on low and cook for 6 to 8 hours…. veggies and meat should be tender… and the kitchen should smell wonderful! In the last hour or so, do a taste test to see if you need any other spices… and don’t forget to make your cornbread!

If you’ve got a crockpot you’re pretty much guilty of crockpot neglect if you don’t make stew in it. And you don’t want to get me started on cornbread. Coooooornbreeeeeeeead – oh yeah!!

You’d be able to tell if we were hanging out in person because I’d snarf every piece of it down and then ask for more. Also, I actually do go around saying “coooooornbreeeeeead, oh yeah!!” when I see the stuff. Fortunately there isn’t a whole lot of it around here, otherwise people would get real tired of hearing me say that.
I’d let you have all the cornbread.. but, you would have to save me at least a bite!!

For cornbread, I follow the recipe on the back of Aunt Jemima corn meal mix, except that I use buttermilk instead of regular milk, and I add a little salt, black pepper, and just a huge pinch of ground red pepper. I would also point out that if you don’t have a seasoned cast iron cooking vessel, you shouldn’t even attempt cornbread.

I agree. Cornbread goes with lots of things, but not beef stew. You need big thick slices of home made bread to accompany that.

This is where we must agree to disagree *sigh* There is no other way to enjoy beef stew than a hunk of homemade cornbread!
Which I make in the oven!
I heat cooking oil in a pan while I mix my batter… then pour it into the hot oil which creates a nice crust. I always mix in a little sugar or honey since we like it a little sweet round these parts. (I do agree though, a cast iron skillet is the best way..need to buy a new one)
Cas-I have made a very similar stoop(as RR calls it). My kids won’t eat it cuz they can see the veggies but DH and I love it.
And I always make cornbread for stoops or stews…It is a must down south

Go for some “Butter Beef” someday.
3-4 lbs of stew beef, 1 stick of butter and one pkg of Lipton’s Onion Soup Mix.
Throw it in the crockpot on low for 6 – 8 hours and serve over hot buttered egg noodles.
Incredible and so damn easy.

I just think beer gives beef a nice flavor, plus it is a naturaly tenderizer and makes the meat melt in your mouth! Wine works too.. but, in this particular recipe I prefer beer. I make my chili with beer too
